Sticky Honey Lime Chilli Chicken

The perfect marriage of honey, chilli, lime and chicken to create a sticky, sweet and slightly spicy dish that comes together in less than 30 minutes making it perfect for mid week dinners.

For the chicken

  • 3 tbsp olive oil
  • 6 boneless skinless (or bone in) chicken thighs OR drumsticks
  • Salt and pepper
  • 12 tbsp smoked paprika

The honey lime chilli sauce

  • 2 tbsp honey
  • 1 tsp olive oil
  • 2 tsp fresh garlic, minced
  • 1/4 cup fresh lime juice
  • 1 tbsp chilli, finely diced
  • 1 tsp fresh cracked black pepper
  • 1 tsp crushed red pepper (optional)
  • 1 tbsp fresh coriander

Method

  1. Add the olive oil to a large skillet over medium high heat. Season the chicken with all of the dry seasonings and once the oil is hot, place the chicken in the skillet smooth side down. Cook on both sides until the chicken has browned
  2. While the chicken is cooking, prepare the sauce by adding all of the ingredients to a bowl and whisk everything together very well. Once you have flipped the chicken and it’s nearing done, pour the honey lime chilli sauce on the chicken (in the skillet) and reduce the heat as the sauce thickens. Let the sauce continue to simmer for 5-7 minutes before removing the chicken from the heat.
  3. Serve with white or brown rice for a complete meal and enjoy with a extra squeeze of fresh lime and fresh coriander.
