Seasonal Winter Bowl

We've been getting lots of requests for simple meals that incorporate our seasonal ingredients, especially the kale/silverbeet you get in your boxes. This quick grain bowl uses high protein grains as the base of your bowl and focuses on a handful of our favourite winter veggies which pack a nutrient punch during the colder months. This one below uses sweet potato, avo, kale and eggs - but you could use anything and any type of grain too. Recipe is for one person, adjust quantities for the mouths you are feeding. 

  • 1 cup roasted sweet potato or pumpkin 
  • 1/2 avocado 
  • 1 cup Kale, ripped or cut into bite sized pieces 
  • 1-2 Tsp olive oil 
  • 1/2 cup cooked quinoa 
  • 1/2 cup cooked chickpeas
  • 1 soft boiled egg, cut in half
  • Salt and pepper to taste
METHOD:
  1. Pre-heat oven at around 180 degrees, chop your sweet potato or pumpkin into bite sized pieces, coat them in olive oil and season with salt and pepper. Cook for around 30-40 minutes until slightly brown and soft in the middle.
  2. Meanwhile, cook your grains according to cooking instructions. Set aside ready to use.
  3. Just before your sweet potato is cooked, pop your kale and chick peas with a light coat of olive oil and salt into the oven to crisp up, about 10 mins.
  4. Boil your eggs for around 5-8 mins. Set aside.
  5. Assemble - grains on bottom followed by the potato/pumpkin, crispy kale, avo and top it off with an egg. Give it a drizzle with some good olive oil or coconut oil, season and eat!
