Nut Butter Gluten Free Toast With Banana And Toasted Coconut

This weeks recipe is a quick but delicious take on breakfast, brunch or dinner. It's one of those easy options when you just can’t figure out what to eat. Toast for dinner is a favourite of ours and this one comes slathered in a protein-packed layer of gooey nut butter, thick slices of perfectly ripe banana (which come in every box we deliver), a generous sprinkle of shaved coconut, a drizzle of local honey and finished with just a pinch of fancy salt. Suddenly, in under 10 minutes, you’ve got a nutrient-rich and kid-approved meal the whole family will love. 

  • 2 thick slices of sourdough bread - for GF option check out this gluten free sourdough 
  • 1/3 cup nut butter (you choose - almond, peanut, macadamia, cashew)
  • 1 medium banana
  • 2 tbsp local honey
  • 1/4 cup toasted coconut
  • 1/2 tsp flaky sea salt
METHOD:
  1. Toast 2 slices of sourdough or gluten free bread.
  2. Divide nut butter and then bananas between the 2 pieces of toast.
  3. Drizzle each slice with 1 tablespoon honey, sprinkle with toasted coconut and flaky salt.
  4. Eat and enjoy.
